Resumo: Muitos estudos têm sido realizados com o objetivo de estudar várias formas de conservação dos alimentos. Neste trabalho foram estudadas três condições diferentes de armazenamento de ovos (tratamentos): armazenamento em condição ambiente, armazenamento em condição ambiente sendo os ovos banhados em óleo mineral e armazenamento sob refrigeração. O delineamento utilizado foi em blocos casualizados, em esquema fatorial com 3 tratamentos e 4 períodos de armazenamento. Foram utilizados 180 ovos, providos de origem única, divididos em leves, médios e pesados, que constituíram os 3 blocos. Os ovos foram avaliados em quatro períodos, nos dias 0 (início), 7, 14 e 21. Foram avaliadas as características Unidade Haugh, densidade do ovo, peso da gema, altura da gema, diâmetro da gema e altura do albúmen. De modo geral, pode-se considerar que o tipo e o período de armazenamento influenciaram praticamente todas as características, e que, o armazenamento sob refrigeração apresentou os melhores resultados sobre a manutenção da qualidade dos ovos.

Eggs qualities evaluated in differents conditions and periods of stock

abstract: Many studies have been realized with the objective of studying several conditions of food conservation. In this work three different conditions of eggs stocking (treatments) were studied: stocking into environmental condition, stocking into environmental condition with the eggs being bathed in mineral oil and stock under refrigeration. The design used was in casualized blocks, in a factorial scheme with 3 treatments and 4 stocking periods. 180 eggs were used with unique origin, divided in light, medium and heavy, that made the 3 blocks. The eggs were avaliated in 4 periods, in the days 0 (beginning), 7, 14 and 21. There were avaliated the characteristics Haugh Unity, the eggs density, the yolk`s weight, its diameter and its height and the albumen height. In a general way, it can be considered that the type and period of stocking influenced almost all the characteristics, and that the armazenament under refrigeration showed the best results on the maintenance of the eggs`qualities.
