Resumo: Este trabalho teve por objetivo caracterizar as condições sanitárias durante a ordenha de vacas leiteiras no município de Santa Rita-PB. Foi realizado em 28 propriedades, através de questionários relacionados com o manejo diário e com a parte sanitária da higiene durante o processo de retirada do leite. Os resultados diferenciaram em relação ao nível de conhecimento técnico e educacional de seus proprietários, mostrando também que o aspecto cultural ainda permanece no momento de buscar formas de melhorar o manejo. Os resultados obtidos mostraram que 96,43% se preocupam em lavar o teto das vacas antes da ordenha e 14,29% não realizam nenhuma prática de utilização de toalhas descartáveis para enxugar os tetos ou solução de iodo para fechar o canal, mostrando que o manejo sanitário da ordenha deixa a desejar, interferindo diretamente na produção e na qualidade do leite.

Characterization of the sanitary hygienical handling in milks of milk cows in the city of Santa Rita, the coast paraibano

Abstract: This work had for objective to characterize the sanitary conditions during it milks her/it of cows milk pans in the municipal district of Saint Rita-PB. It was accomplished in 28 properties, through questionnaires related with the daily handling and with the sanitary part of the hygiene during the process of retreat of the milk. The results differentiated in relation to the level of your proprietors' technical and educational knowledge, also showing that the cultural aspect still stays in the moment of looking for forms of improving the handling. The obtained results showed that 96,43% worry in washing the roof of the cows before it milks her and 14,29% don't accomplish any practice of use of disposable towels to dry the roofs or iodine solution to close the channel, showing that the sanitary handling of the it milks he/she leaves to want, interfering directly in the production and in the quality of the milk.
